So, to get you in preparation mode for your best Summer yet……. I present the sweetest and most endearing way to eat ice cream and scummy cookies together……Homemade Ice Cream Sandwiches!

For this recipe I used my Big Batch Butter Cookies to make these ice cream sandwiches and for very good reason, they are versatile, they make a huge batch of cookies and they are creamy and dreamy in texture!

So the bonus here is that these cookies are guaranteed to give you a perfectly balanced cookie that can be sandwiched between copious amounts of your favorite ice cream!

WHY THESE ARE PERFECT?

I’m on a mission to explain why these are a perfect ice cream sandwich!

The cookie dough recipe used for these ice cream sandwiches is a HUGE batch of cookies. The bonus here is that you can yield up to 50 ice cream sandwiches for your guests.

So, here’s my take on why I LOVE these!

  • Big batch butter cookies that are made into ice cream sandwiches are perfect for weddings, backyard parties, BBQ parties, Ice cream cookie bar, kids birthday parties and bridal or baby showers, because they yield such a huge quantity perfect for feeding lots of hungry mouths!
  • The cookies are buttery, chewy and are loaded with heaps of delicious treats like, chocolate chunks, funfetti, marshmallows, sprinkles and lots more, making these cookies tons of fun!
  • This recipe is great if you are time poor, as you can simply purchase your favorite store-bought ice cream. There is no need to make your own ice cream and it will save you time for other things.
  • Another reason I love these ice cream sandwiches because you can mix n match your ice cream flavors. Simply choose your favourite ice cream flavour or choose multiple ice creams flavours for different options for your guests. For this recipe I choose Tip Top’s Boysenberry Ripple.
  • Because these cookies are an excellent choice for ice cream sandwiches due to them having the right amount of softness and chewiness your guests won’t crack a tooth on a hard cookie that’s impossible to bite!

TIPS FOR MAKING ICE CREAM SANDWICHES

Before you start assembling the sandwiches, below are some tips that will ensure you get the perfect ice cream sandwich:

  • For best results bake the butter cookies the day prior to making and serving your ice cream sandwiches. This will give the cookies plenty of time to set.
  • On the day of making your ice cream sandwiches, make sure you chill the baked cookies in the fridge for 1 hour before assembling the sandwiches. This will help the cookie stick to the ice cream and not melt as quickly.
  • To get the best possible ice cream sandwich it is preferable to assemble the ice cream sandwiches and place them in a square baking tin lined with baking paper into the freezer for at least 30 minutes, so that become cemented together. However, if are desperately wanting to eat your ice cream sandwiches before chilling (and I completely understand!) be prepared for a BIG sloppy mess, because if they are still warm then the ice cream will melt.

  2. Once the cookies are baked, cooled and decorated chill them in the fridge for 1 hour, however it is preferable to bake the cookies the day before allowing them to come together.
  3. When the cookies have been chilling and you’re ready to assemble, remove the ice cream from the freezer and let it soften for about 3-5 minutes.
